This expressive natural comes from Finca Toldopamba in Colombia’s high-elevation Nariño region, where Carlos Burbano and Angela Patiño Findlay work with Castillo and Variedad Colombia grown at 1,900–2,000 meters. Slowly dried on shaded raised beds for more than 30 days, it delivers a wild yet remarkably clean cup with strawberry candy, tangy cacao fruit, and jammy lingonberry.
